Homemade Granola

I love to have healthy snacks at hand when I am in a hurry. It makes life so much easier. My kids adore granola too. They either add it to their nut milk or use it as a nice addition to their morning millet or buckwheat meal. You can even have it by the spoon when you need a healthy snack to support your energy.

This granola is dairy-free and gluten-free.

Makes: 2 jars

Prep time: 7 minutes

Cook time: 15 minutes

Ingredients:

1/3 cup pecans,

½ cup walnuts,

1/3 cup sunflower seeds

1/3 cup pumpkin seeds

¼ cup pistachios

¼ cup hemp seeds

1/3 cup buckwheat flakes

1/3 cup quinoa flakes

1 unripe banana cut into small pieces

3-4 Tbsp coconut oil

1 Tbsp date paste (or honey)

½ teaspoon of sea salt

¼ cup coconut flakes

 

Steps to follow:

1.Preheat oven to 180 C / 350 F.

3.In a large bowl, mix the pecans, walnuts, sunflower seeds, pumpkin seeds, pistachios, hemp seeds, buckwheat flakes, quinoa flakes, and banana pieces. Mix all ingredients well.

4.In a large pot, melt 3-4 tablespoons coconut oil over low heat, and once melted, add 1 tablespoon date paste (or honey) and salt. Stir well and remove from the heat.

5.Add all the nuts to the liquid mixture and mix everything well.

6.Prepare a big baking dish and cover it with a baking sheet.

7.Spread the mixture in a single layer and bake for 10-12 minutes.

8.Sprinkle the coconut flakes and bake for 5 minutes longer until they get lightly brown.

9.Remove from the oven and let the mixture cool completely.

10.Store it in glass jars at room temperature.
